The Woollen Mills Eat House

The Woollen Mills has been one of the most iconic buildings and businesses in Dublin for over one hundred years, and to have taken over this site is a serious privilege for the owners. Much like The Winding Stair, they feel like they are custodians of something very special... a piece of history.

The Restaurant is Ideally located in the heart of Dublin City, with some of Dublin's famous attractions just a short walk away. These include The Guinness Storehouse , Trinity College where the world famous Book of Kells can be seen and also Dublin Castle where The Chester Beatty Library is a must.
The Restaurant hopes that The Woollen Mills be quintessentially Irish, local and of its locale. They want it to be an 'Eating House', a house of food, a place to grab a serious coffee and bun, a serious plate of Irish ham and chips, a place to take home a box of salads and scones, sourdough and sausage rolls, or sit with seven courses of anchovies and crab and herrings and pork and beef rib, overlooking the Ha'penny Bridge and Liffey with a fine bottle of red. Or a craft beer!

The building is over four floors and is (almost) literally on top of the bridge, with double aspect windows and a roof terrace onto the ultimate Dublin cityscape. It is truly magical and so so special. The Restaurant opersates their own bakery and will have a large retail and take-out emphasis, so passing folk can buy their breads, pastries and cakes, as well as choose from a huge sandwich and salad selection during the day.
The cocktails are simple and free from ‘mixologist flair’. They focus on just putting fresh herbs, seasonal fruits or botanicals together with quality spirits to make great flavour combinations. This cocktail style echoes their accessible dining and drinking approach.
The Woollen Mill's avoid ‘tricksy’ names and simply name the core ingredients. They source their drinks with great care and thought and allow you to experience some of the best wines available by opening any bottle you choose for just a glass, a half-litre or a case if you wish.
They have six cask wines (denoted by "C" on the menu) which they bottle themelves when you order it! This allows them to bypass the costly and wasteful bottling processes and get a better drop to your table for less money and less carbon footprint. They think it’s win-win.
